Banana Leaf Wrapped Grilled Green Curry Fish

  • Fresh Basil
  • Chopped garlic
  • Chopped fresh red chili
  • Light soy sauce
  • Fish sauce

Method

  • 1. Cut fish into 6” dice.
  • 2. In a mixing bowl add in the MAGGI® Professional Thai green curry paste, chopped garlic, red chili and fresh basil.
  • 3. Add in fish sauce, light soy and sugar and mix well.
  • 4. Marinate the fish with the above mix and let it rest for 20-30 minutes.
  • 5. Meanwhile cut the banana leaves into 10 cm strips.
  • 6. Wrap each piece of fish inside 2 crossed strips of banana leaf.
  • 7. Grill or pan sear until the banana leaf sticks well with the meat.
  • 8. Serve with light soy sauce or sambal paste.
