Cottage Cheese Satay

Ingredients

  • Cottage cheese
  • Lemongrass
  • Garlic
  • Galangal
  • Kaffir lime leaves
  • Red chili
  • MAGGI® Professional Thai Red Curry Paste
  • MAGGI® Coconut Milk Powder
  • Cumin powder
  • Coriander powder
  • Honey / Sugar
  • Salt
  • Oil
  • Bamboo skewers
  • Red capsicum
  • Yellow capsicum

Method

  • 1. Finely chop lemongrass, galangal, red chili, garlic and kaffir lime leaves.
  • 2. Dice the cottage cheese and capsicum (into 3 cm dice).
  • 3. Heat some oil in a pan and add in the chopped ingredients (from Step 1) with MAGGI® Professional Thai red curry paste.
  • 4. Mix with water and bring it to a consistency of a smooth paste.
  • 5. Add in the cumin and coriander powder with sugar/ honey and salt.
  • 6. Add the MAGGI® Coconut Milk powder and mix again till we reach a smooth consistency.
  • 7. Keep aside to cool.
  • 8. Marinate the diced cottage cheese with the above mix and skewer it with diced capsicum on the bamboo skewers (satays).
  • 9. Pan sear the satays and serve hot with peanut sauce..
