Green Curry Fried Rice

Ingredients

  • MAGGI® Professional Thai Green Curry Paste
  • Coconut milk
  • Sugar
  • Kaffir lime leaves
  • Green beans
  • Cooked jasmine rice/ rice
  • Thai basil leaves
  • Big red chili sliced
  • Chopped zucchini
  • Chopped carrot
  • Chopped broccoli
  • Chopped cauliflower
  • Chopped cabbage
  • Chopped spring onion
  • Oil
  • Salt

Method

  • 1. Pluck basil leaves from the stems and slice the red chili into thin rings.
  • 2. Heat oil in a pan over medium high heat.
  • 3. Add the MAGGI® Professional Thai green curry paste and sauté for a minute or two, just until fragrant.
  • 4. Next add the coconut milk and kaffir lime leaves and let it simmer.
  • 5. Adjust the seasonings at this point with fish sauce and sugar.
  • 6. Add the chopped vegetables and cook until they are done, but still firm. You may need to add a bit of water to help the green beans cook at this point.
  • 7. Add the cooked rice and mix everything together until well incorporated. Check the seasoning.
  • 8. Now add basil leaves and red pepper slices. Cook for another minute until the basil is wilted.
